Have you heard of halloumi? It's the quintessential grilling cheese: the cheese that crisps up and doesn't melt! It's salty and rich and soft on the inside, and lends itself so well to a good pan-frying.


It goes amazingly well with the tangy apples and pomegranate seeds in this recipe, and can be enjoyed in this handheld form as a flatbread!
