Instant Pot Beef Barbacoa

Barbacoa is a delicious, shredded beef with origins in the Caribbean. It’s flavorful, versatile, and so easy to make. I make big batches of this recipe and use it during the week in tacos, bowls, quesadillas... you name it! It’s so delicious and so easy, it’s absolutely one of my favorite recipes to incorporate into so many different meals.
